Some things are worth traveling for, and Swover Creek Farms’ handmade bratwurst is among them. Crafted in small batches at Lynn and Dave St. Clair’s farm in tiny Edinburg, the unusually long, thin sausages adroitly balance the fatty richness of the meat with smoke and spice, including notes of nutmeg and coriander. Lynn St. Clair describes the sausage—made with honey, duck eggs and beer brewed on site at the Virginia Century farm—as a “full circle” product (the hogs used in the sausage are fed the leftover beer grains from the brewing process). Served with a good char on a freshly baked tender pretzel roll, along with Swover’s signature spicy mustard and fresh zucchini relish, the St. Clairs’ brats deliver complex flavor and creamy texture.
