In celebration of Earth Day, April 22, 2025, Lansdowne Resort will host a Virginia Regenerative Farm-to-Table Dinner as part of its popular new Culinary Series. The event will feature the legendary regenerative rancher and author Joel Salatin as guest speaker and the menu will prominently showcase foods sourced directly from his Polyface Farms in Swoope, Virginia.
The Polyface Philosophy
Rather than utilizing conventional farming practices, Salatin and the Polyface Farms team follow nature’s own pattern “to develop emotionally, economically, environmentally enhancing agricultural enterprises and facilitate their duplication throughout the world.” In day-to-day operations, this translates to raising animals on a 100% grass-based diet with “pastured livestock and poultry moved frequently to new ‘salad bars’ (to) offer landscape healing and nutritional superiority.”
The Dinner
Executive Chef Chris Ferrier and his culinary team have crafted an Earth-friendly gastronomic menu showcasing produce and cuts of meat from Polyface Farms expertly paired with varietals from Honig Vineyard & Winery. Practicing Sustainable Winegrowing in California, this family-owned and operated vineyard is yet another Lansdowne Resort supplier committed to the health and well-being of our planet. With Joel Salatin as the honored guest speaker, this dinner is as much nourishment for the mind as it is for the body.
